Questions about replanting a planted tank with fish

I would like to completely rescape my aquarium with new plants, but I am concerned about doing it because I have a large, well-established Rubin Sword and a heavy fish load and do not want to distress the fish by stirring up debris from the gravel.

I used flourite gravel when I set up the tank four years ago and the sword was planted about three years ago and now it has around 20 leaves that are about 15" long, so I'm assuming it has an extensive root system as I've been placing 3 root tabs around it every 3 months since it was planted. The sword has gotten too big for the tank plus the two Clown Loach keep feasting on and shredding the new leaves.

Any suggestions on how to go about replanting the tank without clouding the water with too much debris? I am running two filters on the tank an 2215 Eheim Canister filter and a medium sized HOB Whisper Power Filter - perhaps they are sufficient to handle the debris.
